Matt, not sure if this may be the cause but could be belt noise? has cam belt been changed or any oil leak onto it may be worth checking and other drive belts, a spray of wd40 round inlet manifold/joints could be worth a try if sound in that area.

Phil, further to my first post have found the numbers you need if you want to test the temp transmitter. water temp at 20c = 2.27 - 2.73 and at 80c = 0.29 - 0.34 hope this of use.
